Sunni's Grandma Sydenham's Molasses Cookies

Sunni's Grandma Sydenham's Molasses Cookies

Hi all. Sunni here. My grandma Sydenham used to make these Molasses Cookies every year around the holidays. They were always one of my favorites. I wanted to share the recipe with all of you!

Ingredients:
- 1/2 cup unsalted butter
- 1/2 cup vegetable shortening or coconut oil
- 2/3 cup sugar (plus extra for rolling out)
- 2/3 cup brown sugar
- 2 eggs beaten
- 1/2 cup molasses
- 1 teaspoon vanilla
- Scant 4 cups unbleached flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt

How to: In a stand mixer - cream together the butter, shortening, sugar, eggs, molasses and vanilla. Sift together the dry ingredients and then add to the sugar mixture. Chill for 1 hour. Place some sugar in a shallow bowl. Make balls with the dough and dip one side in sugar. Flatten with sugar side up on a cookie sheet. Make a slight indentation on the top of each cookie with your thumb. Drop 1 drop of water in each indentation. Bake at 400 degrees for 10 minutes.

I don't have a good photo of these cookies, so I've included one from the Blog "Love and Lemons" with a link to her recipe as well. I like that blog and find myself using her recipes often.
